This is one of those meals that is wonderful to come home to… you could make over and over again… eat it over and over again and never be sick of it…
You can do most of the chicken ahead of time and then just leave yourself time to pre-heat the oven, put the drumettes on a baking sheet, and bake! LOVE it!
Back from vacation…
After a much-needed break from the day-to-day grind of life, we are back and were ready to see our two munchkins again… they were ready to see us too, which was SO much fun!

Honey I’m home!!
This recipe is so simple it almost seems funny to call it a recipe. You can really use whatever fruits you love in this recipe but I would try to go for a variety of colors and IN-season fruits… they will taste better AND they are usually cheaper! The color variety just makes it more pleasing to the eye… even my little two year old looks at a colorful fruit salad and says… PRETTY mama!
We definitely eat with our eyes first before we take a bite! In May I will make this with chunks of peaches and whole, fresh blackberries… YUM! I really LOVE the color combination and the flavor of these fruits when they come in season!! Almost like a dessert… Peaches and cream!
I chose pineapple, mango, green grapes, and strawberries for this fruit salad. I’ll be honest, the grapes were not all that great and I should have left them out but I wanted some green so I went for them… should have waited for them to be in season!

Although this will be my last post for the letter “G”, it is most certainly NOT the end of my using Goat Cheese in my recipes. To the contrary, I believe using it as one of Apples to Ziti’s ingredients has made me want to use it even MORE!!
I thought we might grow tired of its creaminess, its lightness, its tart but slightly sweet flavor…. WHAT AM I SAYING?!!!
We have not grown tired, and I plan on making these last two recipes AGAIN and AGAIN and AGAIN!
My husband and I are off to California/ Mexico this next week for a much needed get-away!… Thus, I am finishing with not just ONE but TWO Goat Cheese recipes before saying goodbye for a week…

It’s no secret that I love goat cheese….
One of the ways I love it best is on a salad with some sort of balsamic dressing. While brainstorming ideas for serving goat cheese on a salad in a new, delicious way, I came across a recipe that encrusted the goat cheese in walnuts and baked it. I loved the idea!!… but the recipe had way too many ingredients to be budget-friendly.
So, I set out again to create my own version that had big flavor but little cost!

I actually was able to find quite a few recipes for sandwiches with grilled or roasted veggies paired with goat cheese. I loved reading through (and sometimes drooling over) many of them…
I was having trouble finding that combination of budget-friendly and tasty that I was searching for…
Thus, I decided to make my own! Eggplant + goat cheese + tomatoes + greens + fresh herbs + bread… that’s basically your shopping list right there!
I had ground turkey in my fridge that I had planned to use for a feta recipe, but I changed my mind about which recipes to make and this was leftover. It was time to freeze it or use it…
The consensus??… USE IT!
Something about a sandwich sounded so fulfilling this particular afternoon and I was having dreams of some delicious honey mustard spread on it. The only sandwich made with ground turkey that I could think of… Turkey Burgers!…with GOAT CHEESE!! Now I’m getting hungry!… the fridge showed no promise of honey mustard of any kind… darn
Hmmm, I did find dijon and honey. That would work! I started by mixing these and went on from there to create my own version of honey mustard…
I ran across a recipe with goat cheese that’s super quick to make and super healthy…. I made it and it’s also SUPER scrumptious!
You don’t often run into a recipe that’s written for one person so this made it especially unique in my book. You could definitely double, triple, etc… the recipe, but if you just need a healthy, delicious lunch for yourself… HERE IT IS!!

–Dried pasta shells (Orecchiette if you have it or can find it) (you need 1 cup dried pasta)
–Mediterranean-style mixed salad greens (or spring greens or whatever mix you like!) (you need 2 cups)
–Sun-dried tomatoes (packed in olive oil) (you need 2 TBSP)
–Goat cheese (you need 1 TBSP crumbled)
–Parmesan (you need 2 TBSP grated plus more for garnish)
*Pantry staples to check: Salt & Pepper
I thought long and hard about this one…
Choosing something with the word “goat” in it tends to scare people off. I’m not sure why “cow” cheese sounds any better to anyone, but there are numerous people we’ve encountered who are reluctant to try goat cheese simply because it sounds “weird” or “gross”. They have no idea what they’re missing.
Choosing another cheese right after doing ‘Feta’ seemed a bit repetitive… or NOT… because they are COMPLETELY different tastes and textures. As different as a potato chips and pudding… at least in my opinion. The feta is salty and crumbly, while the goat cheese is soft and creamy with a hint of sweetness somewhere in there.
Choosing something a bit on the expensive side seemed the final barrier to choosing this ingredients. Garlic… Ginger… Garbanzo Beans… Greek Yogurt… all these options seemed they might be less expensive to add to any given recipe…
In the end, the goat cheese won out. It may not be the most budget-friendly ingredient, but we seem to find a place for it in our budget each month so I decided to go for it. We love it too much to pass up the letter “G” with anything else!

They were as good as they look… oh my goodness, I think I could eat this everyday…
Yet another recipe of mine made with ingredients I had on hand…
My husband said this is one of his favorite things I’ve made thus far!….
AND this is him eating it RE-heated, 3 hours after it was originally made! I assured him it was even better served hot right out of the oven and with the salad alongside… needless to say… this recipe will DEFINITELY be making an appearance again in the near future at our house!
