F is for Feta & Tomato Frittata

Many of the recipes I make myself come from the need to make a quick lunch. My challenge? To include whatever ingredient I’m currently doing for Apples to Ziti.

A frittata is super simple to make as long as you have an oven-safe skillet.

Here’s what you need:

THE PREP:

Pre-heat your broiler first. Then, start these steps:

TIME TO COOK!

 

Pour the beaten eggs right over the tomato/onion mixture….

Beautiful…. I love eggs in any form really…. but when they’re this simple, it’s even better.

Give the eggs a stir right away to distribute the veggies evenly throughout them.

Turn down the heat to medium-LOW. Then just let the eggs set for a couple of minutes before you sprinkle 1/4 cup crumbled Feta cheese even over the top. You don’t want to add the cheese right away because it will just sink to the bottom.

Give it about 1 minute more on the stovetop (turning the heat lower if you think it might burn).

Then pop it under the broiler for 3-5 minutes until the top is golden brown and just about set.

Take it out of the oven and let it stand for 2 minutes then remove it IMMEDIATELY to a large plate.

Use a rubber spatula to get it nice and loose… then just slide it over to the plate carefully!

Just $.99 to $1.31 per person!! (Depending on it’s feeding 3 or 4) Great deal, right?!
