In a Jam

It’s been a long week and you have neither the time nor the energy to make a fabulous, healthy side to that frozen pizza you whipped out of the oven…

Oh wait, I’m sorry, that was me. Is that a sacrilege?… Frozen pizza I mean. Bad? No?

Well, in any case, we have it from time to time at our house.

I love to have a good salad with my pizza and this one is great as a quick side for you and your family ANYtime…

When I made it this time around it was for our Mother’s Day get-together with my husband’s family. It’s simple and delicious.

You can add toppings to it if you like or just leave it as is!

Here is everything you need:

Olive oil, balsamic vinegar, strawberry jam, strawberries, and greens. JUST FIVE INGREDIENTS!!

(Okay, seven ingredients with salt and pepper)

Make your dressing:

Start with some jam or preserves…

Add in some good balsamic vinegar…

Whisk in some EXTRA VIRGIN Olive Oil…. this has the best, fruitiest flavor so you really want to use it!

(As opposed to regular Olive Oil)

Whisk as you add the olive oil in so it EMULSIFIES (becomes one with) the jam and balsamic!! Really go for it!

(You can make this ahead and just re-whisk it when you’re ready to dress the salad)

Just arrange your greens on a platter…. about 1 HEAPING cup per person I’d say…

Add a BUNCH of strawberries that you’ve washed, patted dry, hulled and sliced….

(About 1/2 cup sliced strawberries per person)

You can COVER this with Saran wrap and store it in the fridge 1-2 hours before you serve…

Then, when it’s just about eating time, re-whisk the dressing and drizzle it evenly over the top!

The dressing is enough for 4 servings so make a double batch if you’re serving more people! You don’t need to use it all… just use about 2/3 of it and put the rest on the side for people to add to their portion if needed.

DONE!!

And… The Cost???

You’re looking at only about $1 per serving (and definitely less if you buy your greens and strawberries on sale or in bulk!)
