Lemon-Garlic Chicken with Creamed Corn
Super simple, super easy, super budget-friendly….
All you need for the Chicken… Chicken, garlic, lemon juice and zest, olive oil, flour, salt and pepper!
Sprinkle skin-on, bone-in chicken thighs and legs with salt, pepper, and flour on ALL sides…
Heat some olive oil in a large, OVEN-PROOF pan and lightly brown the chicken on all sides….
Mmmmm… this really infuses flavor into the skin and helps crisp it up!
Then add in a WHOLE BUNCH of garlic and some lemon juice & zest!
Transfer the pan to a 450°F oven and roast them until they’re golden and cooked through… about 20 minutes…
While the chicken is roasting… you can make some creamed corn…
Frozen corn that you’ve thawed, butter, whole milk, flour, and minced chives… That’s all you need!
First, melt some butter in a saucepan.
Then add the corn, season it, and cook that for a bit to soften it.
Next add the flour and milk, bring it to a boil, and then simmer until it’s thickened.
Finish it off with the chives…
Pull the chicken out of the oven… YUMMMMMMMMMMMMMM
Divide the chicken amongst your plates or put it on a serving platter. Drizzle the chicken with the juices from the pan and add the creamed corn on the side….
COST? $2.23 per person for FOUR people… but this recipe served more for our family! We had about a serving and a half leftover for another meal for my girls and I.
