After I finished cooking this recipe I looked around my kitchen (and my neglected house), saw the mess I had made, and just wanted to cry.
I always say things like, “It looks like a tornado went through here…” or “Is there a family a bears living here? Who made this mess?!…”
But this was different.
This was worse.
I thought about just bulldozing the house and starting from scratch.
There is something about “sticks” that make food more desirable to my munchkins… a boring turkey sandwich becomes exciting and gourmet when I cut it into squares and stick a toothpick into each one. Juice is yummy in a glass, but freeze it on a stick so you can lick it?! SO MUCH BETTER… right? Candy… so fun to eat. Candy on a stick (i.e. A Lollipop)… a special treat. Thus, chicken served right on the skewers it was cooked on… MAGNIFICENT!!
I love when they get excited about their dinner before it enters their little mouths.
Peanut Butter Fudge. One of the reasons I’ve been absent from the blogging world for the past week or so. I’ve been busy making (and eating) lots of it.

Two things happened this past week that nearly knocked me over, gave me great relief, and renewed my excitement for this little blog of mine.

Okay, so I’m not sure what to call this recipe, but it’s amazing and you MUST try it!
The closest thing I can think of is jelly… no, more like preserves because it’s not smooth… so I guess “jam” is a good name for it. There you go, this post should have been called, “Onion Jam”. At least your handy RECIPE printable will no longer be titled “Onion Stuff”… “JAM” it is!!

Whether you’re having a huge gathering at your house, taking a dish to someone else’s gathering, or just making dinner for your family, then it’s time to make Spicy Pop Pulled Pork.
Some pulled pork recipes take a bit to get together… even the slow cooker ones… but this one is not one of them.
In fact, I would challenge you to see just how fast you can get this in the pot. Next time I make it I’m setting a stopwatch and I plan to keep track so I know if I break my record. It’s just that fast!
The recipe is for cooking it in the oven but I made it in the slow cooker to save on energy and heat… 6 hours with the oven on in the middle of the day means an air conditioner that has to work DOUBLE time… not an option for our budget right now!
After hitting “Publish” I realized that my most recent post, my Rustic Nectarine Pie, was my 100th POST!! What?!
This came as a surprise to both my husband and I…. “Honey!!!… do you have any idea how many posts I’ve made??” He was thinking between 35 to maybe 50 at the most… but ONE HUNDRED!? WHAT?????
Whew! That makes me tired… I won’t think about how many hours of pictures taking, color-correcting, and writing this adds up to be… A LOT. We’ll just leave it at that. Funny thing is… it doesn’t feel like that much really… I love every minute of it!

It’s hot. The ice cubes have stopped working. I decided to try ice cream instead. I’m liking the results.
I couldn’t just eat plain ice cream. I had to indulge my imagination a bit more than that.
I went a little overboard…. I came up with TWO Nectarine desserts to go with my ice cream! Both ideas struck at once and I couldn’t leave on of them behind. Thus, you will be getting TWO dessert recipes to end the Nectarine saga.
Hahaha. DOUBLE the desserts. DOUBLE the fun. No mint included… though, that might be tasty??

Today the chance for rain in Phoenix went from 30 percent to 20 percent…
My “Gigi” (my husband’s grandma) said it best: “It never rains at 20 percent”. Sadly, I know she’s right.
It was slightly overcast yesterday for an hour or two and I thought…. YES!! The rain is going to come! My hopes were shattered today when that percentage changed. I’ve started sucking on ice cubes to keep myself cool. I don’t mind the heat for the first few weeks but then it starts to make me tired and more easily irritated… by August I’m so ready for the heat to be over I can hardly stand it.
Besides ice cubes, the foods that sound best right now are those that are cool and refreshing… like chilled Pico di Gallo!
