If you love shrimp and you love simple… you’ll love this simple shrimp recipe!

I really LOVE shrimp. I really really really LOVE it! I’d choose it over chicken or pork any day and some days I might even choose it over steak! (maybe)

The problem with shrimp for me is twofold. First of all, it’s expensive. There’s not really any room for it in my grocery budget on any sort of regular basis. Second of all, my husband is not really a fan. He’s only had one version of shrimp that he liked and it involved barbecue sauce. There used to be a third reason why shrimp was not cooked in my house and that’s because I had NO idea how to cook it. But I’ve done a lot of experimenting and this roasting method makes it about as easy as possible to cook your shrimp perfectly at home. You can put it on skewers or you don’t have to. But I thought it would look nice on the plate if I used skewers so I totally went for it.

I wrote this recipe as part of a Valentine’s Day ‘Romantic Dinner for Two’. I hope you have a chance to check out the whole menu!

Now get ready. This is going to go quick so I don’t want you to miss anything.

Place the shrimp in a small bowl. Add olive oil, thyme, salt and pepper. Give them a stir to coat them evenly.

Thread the shrimp skewers. If they’re wooden skewers be sure to soak them in water for about 30 minutes prior to thread on the shrimp. Just to be sure they don’t catch fire in the oven. I don’t think you’d be very happy with me if that happened. And I don’t want you to be mad at me. We’re buds. Pals.

Now place those babies on a large baking sheet that you’ve lined with foil and sprayed with cooking spray.

Roast them for just 5-6 minutes. They’ll be pink and pretty!

Ah…. doesn’t the shrimp look lovely next to the potatoes and short ribs. YUM. I’m hungry.
