Are you ready to get out some aggression?

Okay, so not really.

But with a title like “SMASHED Red Potatoes”, it did sound like something aggressive was going to happen. No?

These are SMASHED Red Potatoes. But the smashing is really more of a smush than a SMASH. I suppose you could really smash them, but they wouldn’t be nearly as appetizing. Or as pretty on the plate.

Now let’s get to the SMASHING! Or smushing… I guess.

Put the potatoes into a medium-sized saucepan with some peeled and lightly smashed cloves of garlic. Cover everything with cool water by about 1-inch or so. Then bring it to a boil. And then let it simmer.

After the potatoes have simmered with the garlic for 15 minutes. Drain ’em. Toss the garlic.

The potatoes get placed in a glass baking dish that you’ve greased.

Then you use the back of a spoon to lightly smash (or smush) the potatoes open. If a potato breaks apart when you smash it, just press it gently back together in its smashed form. It should stick together just fine. No worries!

Drizzle some olive oil, melted butter, salt, and pepper over the top of the potatoes.

They get placed under the broiler for 6-10 minutes until they’re golden brown and crispy on top.

To finish you just dollop on some sour cream and sprinkle some chopped fresh chives on top of that.
