Most mornings I am an oatmeal girl. It’s easy to make. It’s good for me. It’s yummy and satisfying. It’s part of my routine. And I like routine. I do well with routine. But… Morning after morning of oatmeal can get a bit repetitive.

Sometimes we need to take a break from our routines and get outside the box. We need some eccentricity in our lives. Something different. Something extraordinary.  Something special. But still delightfully delectable.

Start with Bacon. Canadian Bacon. This takes these HEAVENLY bites to the HEALTHY side.

You might want to make a little extra or even a DOUBLE portion of this part of the recipe. For snacking purposes. It’s inevitable. Or at least it was for me.

A touch of butter in a pan. Even healthy recipes can handle a pat of decadence.

Pour in a touch of maple syrup to Candy the Canadian.

Be sure you DO NOT transfer your Canadian Bacon to a paper towel. Things will go badly for you. VERY BADLY. Just transfer them to a plate. And all will be right with the world.

Now stack up thinly sliced deli ham.

Slice it.

And dice it.

Add it to a bowl with a heaping cup of shredded cheese. I used Colby Jack but you can use Cheddar or whatever shredded version you prefer.

Now divide he ham & cheese mixture as evenly as possible between 24 mini muffin cups that you’ve coated with cooking spray.

Beat 8 eggs in a large bowl.

Add one tablespoon of milk.

And salt and pepper to your taste.

Give it a really good whisk!

Fill each of the mini muffin cups just below the rim.

Bake at 375°F for 8 minutes. Then take them out and top each with a bit of your Canadian Bacon. Again, dividing it as evenly as possible.

Then bake them for about 4 more minutes until they’re cooked through.
