Hello there little hoppy (aka ‘Bunny’). You are going to be a hit. I can just feel it.

Just wait until you dip through the layers of these SUPER-easy-to-make Blackberry Cheesecake Parfaits.

 

You get the crunchy texture from the graham crackers, sweetness from the vanilla yogurt, tang from the blackberry-cream cheese layer, creaminess from the homemade whipped cream, and freshness from the fresh blackberries on top. You can add some “cuteness” to this mix for your Easter Brunch by adding one of these adorable little ‘Bunny Grahams’ from Annie’s Homegrown. They are tasty any time of year, but they are extra special at Easter for a little fun.

Crunchy. Sweet. Tangy. Creamy. Tart. And CUTE!! Now that’s hard to beat.

Stick some graham crackers in your food processor and puree them. Or put them in a zip-top bag and finely crush them like I did. No fancy tools required.

That blackberry color really sends this parfait over-the-top! GORGEOUS. This layer is rich so it should be 1/4 to 1/3 the size of your vanilla yogurt layer. Or just do whatever you please. There’s really no rules.

Now for the homemade whipped cream.

Heavy cream.

Powdered sugar for a touch of sweetness.

I usually make my whipped cream with a hand mixer, but I’m at my mother-in-law’s and I decided to use her stand mixer. The whipped cream was done so fast!! It over-whipped just a bit. I couldn’t believe how fast this whipped up! One quick lick (or two) and I knew it was fine. More than fine. Creamy deliciousness! There’s nothing like homemade whipped cream. If you’ve never made it or tried it…. you must. Mmmm.

I transferred the whipped cream to a Ziploc bag to make my own piping bag.

You’ll need to snip off one corner and you’ll be in business!
