I have yet to meet a noodle that pesto didn’t get along with.

Come to think of it… I have yet to meet a noodle that didn’t get along with.

Pork & Nectarine Salad with Creamy Feta Dressing

IMG_1323

Summer is in full swing here in Phoenix. You know this when the temperature breaks 115°F… funny enough, a 101°F day is mild and yes, you can tell the difference. In the midst of these weeks of extreme heat we stay inside more often than not, meaning that I can indulge in my official state of “nesting”.

Lighten Up!

After that rich, indulgent fried cheese sandwich, I thought it was time for something a bit on the lighter side…

Mozzarella in Corrozza

If you appreciate using ingredients you have on hand to make delicious food, you will like the history of Mozzarella in Corrozza. It was a sandwich that was made to use up day old bread along with ingredients that would be abundant on a typical Italian farm: cheese, eggs, milk, and olive oil.

Simply stated, it’s a battered, fried cheese sandwich.

It is Mozzarella in a Carriage (“in Corrozza”)… the bread being the “carriage” that holds the mozzarella!

If you’re in the mood for more Italian classics… check out my bruschetta recipe!

This being my first attempt at the sandwich I learned a lot and have some tips to pass on to you.

Move Over for Mozzarella!

We could probably camp out here for the rest of the year and never struggle to find a recipe.

Picking only a few recipes proved to be a difficult task… How did I choose?

For the first Mozzarella recipe I decided to make something I absolutely LOVE LOVE LOVE to eat…

Lemon + Pasta

I am happy to say that I get to cook for a man who will try just about any food… almost nothing is “off the table” in terms of ingredients.

Funny enough though, this recipe for Lemon Spaghetti just happened to hit two of his very few food qualms… olive oil-based pasta sauce (he prefers red or cream sauces) AND lemon

Yes, you heard right, LEMON! While he likes it in desserts, he doesn’t like lemon-infused savory dishes…. and YES, he does try them before giving this opinion 🙂

Now, I really LOVE lemon anything… but I don’t usually make or choose recipes with a lot of lemon because of my husband’s preference. After all, I have very few limitations in terms of what food I can make, so I figure I can acquiesce to this anti-lemon thing.

When it came to choosing “L” for A to Z it was difficult to decide whether or not I should go for the “Lemon” or do something else. I decided to see it as an opportunity to try out some lemon recipes I’ve been eyeing for a while. I thought maybe I could convince my husband that lemon was DELICIOUS, AMAZING, MOUTH-WATERING!!!!….

I did not succeed.

Nonetheless, he was a trooper and tried all the lemon recipes… both sweet and savory… even if they were not all up his alley. When I made Garlic-Lemon Chicken the lemon flavor was definitely there but not too strong so he was okay with it. In the case of Lemon Spaghetti this was not the case… it was too lemony for his taste. My girls and I, on the other hand, LOVED it!!!

And if you like lemon you’ll love it too! Not only because of its flavor but because of its simplicity.

In fact, I felt totally comfortable writing this longer-than-normal intro to the recipe because it is SO short and simple that it will hardly take up any of your time to read…

While I can’t add this recipe to my “David-approved” list, it is DEFINITELY on mine!

A savory take on Jam

At first I dismissed the idea of “J is for Jam” altogether because I thought there would be no “dinner” recipes made with jam…

Only desserts came to mind.

Then I realized that jams would make a FANTASTIC glaze for meats… especially chicken or pork. But more on that in another post.

A “jam” that I definitely did not expect but ended up LOVING is the subject of today’s post: TOMATO Jam!

Throw out any pre-conceived notions that just entered your head… you NEED to try this!

Tomatoes are a fruit after all… why not make jam out of them?

This is amazing on a burger!!! Take a look…

Goat Cheese Pizza & Cheesecake

Although this will be my last post for the letter “G”, it is most certainly NOT the end of my using Goat Cheese in my recipes. To the contrary, I believe using it as one of Apples to Ziti’s ingredients has made me want to use it even MORE!!

I thought we might grow tired of its creaminess, its lightness, its tart but slightly sweet flavor…. WHAT AM I SAYING?!!!

We have not grown tired, and I plan on making these last two recipes AGAIN and AGAIN and AGAIN!

My husband and I are off to California/ Mexico this next week for a much needed get-away!… Thus, I am finishing with not just ONE but TWO Goat Cheese recipes before saying goodbye for a week…

I have a simple “homemade” pizza recipe you can whip up in no time AND a decadent dessert that has given me a go-to recipe I may never stray from!!!

It is late and unfortunately there is no time for calculating and posting the cost for these recipes right now…. so just enjoy and don’t worry about money for a few minutes while you read this… or drool over this (as the case may be).
