Slow-Cooker Mexican Shredded Chicken

Slow-Cooker Mexican Shredded Chicken | Cinco de Mayo Recipes | ApplestoZiti.com

On Cinco de Mayo I posted a Vanilla Bean Banana Muffin recipe that is to die for. But the thing is… banana muffins are not what you would call ‘festive’ for this holiday. Therefore, even though I didn’t have time to get step-by-step photos ready, I thought I should at least post one recipe this week in honor of Cinco de Mayo. {I will try to get a step-by-step for this recipe up soon though!}

Toffee-Pecan Brown Sugar Cookie Bites

IMG_4733_2

Kind of a long title. But you know what you’re getting. Or at least you think you do. These were the recipe I was least excited for… and I liked them best. And they’re the easiest. Well, the fudge was pretty easy but powdered sugar destroys my kitchen. No matter how careful I am, it gets everywhere. EVERYWHERE.

Spicy Pop Pulled Pork & Onions

img_1652 copy

Whether you’re having a huge gathering at your house, taking a dish to someone else’s gathering, or just making dinner for your family, then it’s time to make Spicy Pop Pulled Pork.

Some pulled pork recipes take a bit to get together… even the slow cooker ones… but this one is not one of them.

In fact, I would challenge you to see just how fast you can get this in the pot. Next time I make it I’m setting a stopwatch and I plan to keep track so I know if I break my record. It’s just that fast!

The recipe is for cooking it in the oven but I made it in the slow cooker to save on energy and heat… 6 hours with the oven on in the middle of the day means an air conditioner that has to work DOUBLE time… not an option for our budget right now!

Slow Cooker Pork Tenderloin Sliders

I have done pulled pork on A to Z already, but I couldn’t pass up the opportunity to invent a version made with pork tenderloin instead of your typical pork shoulder.

QUICK Baked Barbecue Chicken

This is so simple… you won’t believe it!

On this evening my husband had to work late so I knew it would be just me and my girls for dinner!

Hmmm… this meant none of the usual help he gives me while I’m making dinner…

I had to keep it simple and QUICK!

IMG_1135

The recipe may be simple but the possibilities for serving it are virtually endless….

You could serve the chicken with dipping sauces… then just add a veggie, a side salad and/or potatoes for a meal!

For a main dish salad you could serve the chicken on top of salad greens with crumbled blue cheese, onions, tomatoes, avocados, and a ranch or buttermilk dressing. You can pick and choose the toppings!

You could make a BBQ chicken quesadilla with similar toppings to the salad… crumbled blue cheese, onions, avocados or guacamole for dipping.

OR…

Put the chicken on a sandwich or wrap it in a tortilla… add toppings and ranch… another meal!

DINNER IS SERVED!

Really, you can enjoy it however you like… but it’s DELICIOUS any way you use it!

Honeyed Carrots

These carrots couldn’t be easier to make and the glaze is so good you could drink it…

IMG_0002

Just really good comfort food. This is always how my mom and grandma would slice their carrots so it brings me back to childhood. It’s always good to feel like a carefree kid again, isn’t it?

Here’s the Recipe and the Shopping List!

Honey Balsamic Chicken Drumettes

Honey I’m home!!

IMG_9589

This is one of those meals that is wonderful to come home to… you could make over and over again… eat it over and over again and never be sick of it…

You can do most of the chicken ahead of time and then just leave yourself time to pre-heat the oven, put the drumettes on a baking sheet, and bake! LOVE it!

A is for “Pork Chops & Applesauce”

I know I’m going past the two week mark on ‘Apples’, but I have one more dinner and two desserts to share with you before moving on to “B”. We will still start ‘C’ the first of December (two letters per month), but I’ve decided to extend “A” two days… it’s my prerogative to adjust the rules as I please… you will be happy I did… 🙂

I will reveal what ‘B’ stands for on Saturday!

So, “Pork chops and Applesauce”…

I have always wondered where this phrase came from.

Whenever my mom would make pork chops my dad would always say this phrase in a funny voice and, though I thought it was funny, I never knew where it came from. My husband said the same thing… his parents would say it but he never knew where it came from.

Well, I solved my mystery (or at least I think I did)! The quote they were saying comes from Peter Brady on a Brady Bunch episode where he was imitating Humphrey Bogart. Am I wrong? Tell me if you think differently!
