After hitting “Publish” I realized that my most recent post, my Rustic Nectarine Pie, was my 100th POST!! What?!
This came as a surprise to both my husband and I…. “Honey!!!… do you have any idea how many posts I’ve made??” He was thinking between 35 to maybe 50 at the most… but ONE HUNDRED!? WHAT?????
Whew! That makes me tired… I won’t think about how many hours of pictures taking, color-correcting, and writing this adds up to be… A LOT. We’ll just leave it at that. Funny thing is… it doesn’t feel like that much really… I love every minute of it!

My husband said this is one of his favorite things I’ve made thus far!….
AND this is him eating it RE-heated, 3 hours after it was originally made! I assured him it was even better served hot right out of the oven and with the salad alongside… needless to say… this recipe will DEFINITELY be making an appearance again in the near future at our house!

I discovered this recipe during my second pregnancy and have been making it ever since. If I’m making the recipe for just me (which is often the case), I will make a recipe for four and just add the eggs when ever I’m in the mood for eggs throughout the week. Making it for more than one person is simple too, AND, of course, it’s budget-friendly!
The hot sauce is optional but I like a little kick now and again with my eggs 🙂
SHOPPING LIST: 1 red onion, 1 red bell pepper, 1 can black beans (low-sodium, if possible), 8 eggs, 1/3 cup pepper jack cheese (or cheddar if you don’t like it spicy), 1 large tomato (or two small ones), 1 small avocado, tortillas (recipe calls for 10-inch, burrito size)
Stapes to be sure you have: Canola oil, Chili flakes, Cooking Spray, Salt & Pepper
Some optional items: sour cream, salsa, hot sauce
Easy, DELICIOUS quiche that is… 🙂
I thought about titling this post “E is for Egg Quiche”, but a quiche by definition is made with eggs, so I decided the “egg” part was obvious.
This recipe is my own. I only had one meat, one cheese and one type of herb on hand so that is what was added. I read through over 50 quiche recipes to see how other people made their quiche (ratios, ingredients, etc.) They ranged from fairly simple and a few ingredients to very involved and heavy with ingredients. Since I was going for a budget-friendly recipe, I needed something simple with just a few ingredients. This made TWO meals for my little family, but we are about the equivalent of 3 people (almost). You may easily be able to finish it off in one sitting! I would say it feeds four adults. Possibly more if it is served with a salad and/ or fruit on the side.
I love to get my stomach rumbling and my mouth watering to jump start menu planning, so here’s the shot of the final product:

This salad can be made into a meal by adding some grilled chicken and fruit. You can grill your own chicken or buy the packaged chicken strips (heated or unheated) to use to make this a meal!

After making this for my family I experimented a bit more with the recipe to come up with the tastiest, crispiest product possible. Baking the chicken in the oven makes it much healthier than fried chicken. The challenge is that mixing chips with egg wash proves tricky when attempting to come up with a crispy final product! I believe I’ve come up with the Doritos recipe to give you great flavor and the crispiness you desire! The pictures taken reflect my first attempt at this recipe. My final written recipe will give you all the updates to make your Dorito Chicken the best (crispiest) it can be.
This recipe is SUPER easy and SUPER cheap! It fits right into my need for budget-friendly recipes.
