Most mornings I am an oatmeal girl. It’s easy to make. It’s good for me. It’s yummy and satisfying. It’s part of my routine. And I like routine. I do well with routine. But… Morning after morning of oatmeal can get a bit repetitive.
I have been BURSTING at the seams to share this fabulous Easter Brunch with you!! It says “for Kids” and “Easter” in the title… but it really could work for any brunch throughout the year and would be great for kids and grown-ups alike!

If you appreciate using ingredients you have on hand to make delicious food, you will like the history of Mozzarella in Corrozza. It was a sandwich that was made to use up day old bread along with ingredients that would be abundant on a typical Italian farm: cheese, eggs, milk, and olive oil.
Simply stated, it’s a battered, fried cheese sandwich.
It is Mozzarella in a Carriage (“in Corrozza”)… the bread being the “carriage” that holds the mozzarella!

This being my first attempt at the sandwich I learned a lot and have some tips to pass on to you.

And the next recipe, you guessed it, I couldn’t make it past ‘L is for Lemon’ without including the classic “Lemon Bars”.
I am happy to say that I get to cook for a man who will try just about any food… almost nothing is “off the table” in terms of ingredients.
Funny enough though, this recipe for Lemon Spaghetti just happened to hit two of his very few food qualms… olive oil-based pasta sauce (he prefers red or cream sauces) AND lemon…
Yes, you heard right, LEMON! While he likes it in desserts, he doesn’t like lemon-infused savory dishes…. and YES, he does try them before giving this opinion 🙂
Now, I really LOVE lemon anything… but I don’t usually make or choose recipes with a lot of lemon because of my husband’s preference. After all, I have very few limitations in terms of what food I can make, so I figure I can acquiesce to this anti-lemon thing.
When it came to choosing “L” for A to Z it was difficult to decide whether or not I should go for the “Lemon” or do something else. I decided to see it as an opportunity to try out some lemon recipes I’ve been eyeing for a while. I thought maybe I could convince my husband that lemon was DELICIOUS, AMAZING, MOUTH-WATERING!!!!….
I did not succeed.
Nonetheless, he was a trooper and tried all the lemon recipes… both sweet and savory… even if they were not all up his alley. When I made Garlic-Lemon Chicken the lemon flavor was definitely there but not too strong so he was okay with it. In the case of Lemon Spaghetti this was not the case… it was too lemony for his taste. My girls and I, on the other hand, LOVED it!!!
And if you like lemon you’ll love it too! Not only because of its flavor but because of its simplicity.
In fact, I felt totally comfortable writing this longer-than-normal intro to the recipe because it is SO short and simple that it will hardly take up any of your time to read…
While I can’t add this recipe to my “David-approved” list, it is DEFINITELY on mine!
What? I’m serious. Seriously… grilled cheese.
And yes, there IS in fact JAM in the recipe.
Listen, if you’re a mom, you know there are moments of desperation when you would try anything to get lunch together, right?

Okay, so it’s not your typical grilled cheese but there is cheese in it and it is grilled… cheese + grilled = GRILLED CHEESE… at least in my recipe-writing it does. 🙂
Oh yes, and if you’re opposed to the idea of frozen waffles… you might as well just stop reading right now.

This recipe does it all. Except maybe the dishes… you’ll have to do those yourself… or enlist someone to help you.
Just tempt them with these calzones… they’ll have no choice but to grant you a night off from dish-duty!
These are EASY because I don’t have you make your own dough… I experimented with two store-bought doughs and was happy with both of them. They yielded slightly different results but BOTH were tasty!
The official recipe for this “Big Greek Salad” can be found here. I took out a couple of ingredients, added in one, and modified the directions just a touch to tailor it to my family’s tastes.
I served it with Turkey-and-Rice Stuffed Peppers and they were a great match! A delicious, gorgeous meal…
