QUICK Baked Barbecue Chicken

This is so simple… you won’t believe it!

On this evening my husband had to work late so I knew it would be just me and my girls for dinner!

Hmmm… this meant none of the usual help he gives me while I’m making dinner…

I had to keep it simple and QUICK!

The recipe may be simple but the possibilities for serving it are virtually endless….

You could serve the chicken with dipping sauces… then just add a veggie, a side salad and/or potatoes for a meal!

For a main dish salad you could serve the chicken on top of salad greens with crumbled blue cheese, onions, tomatoes, avocados, and a ranch or buttermilk dressing. You can pick and choose the toppings!

You could make a BBQ chicken quesadilla with similar toppings to the salad… crumbled blue cheese, onions, avocados or guacamole for dipping.

OR…

Put the chicken on a sandwich or wrap it in a tortilla… add toppings and ranch… another meal!

DINNER IS SERVED!

Really, you can enjoy it however you like… but it’s DELICIOUS any way you use it!

Italian Sausage & Chicken Pot Pie

This recipe is fun to make in individual servings, as well, but making the whole pie is a bit quicker and I was definitely short on time for actual cooking on this night for dinner…

There are some make-ahead tricks that will help you save time and money for this dish!

Due to the craziness of my night when I shot this particular recipe, I unfortunately don’t have a picture of the pie cut into. I’ll admit, it’s not the most beautiful colored dish (topping each slice with a bit of chopped fresh parsley definitely boosts the color and flavor a bit but it’s not necessary).

I will tell you though… no matter what you think of the look of this pie, it is comforting, gratifying, and downright delectable…

Make it on a day you need some extra comfort… it will be delicious no matter when you decide to pop it in the oven!

Honey Balsamic Chicken Drumettes

This is one of those meals that is wonderful to come home to… you could make over and over again… eat it over and over again and never be sick of it…

You can do most of the chicken ahead of time and then just leave yourself time to pre-heat the oven, put the drumettes on a baking sheet, and bake! LOVE it!

Pecan-Coated Goat Cheese with Grilled Chicken Salad

It’s no secret that I love goat cheese….

One of the ways I love it best is on a salad with some sort of balsamic dressing. While brainstorming ideas for serving goat cheese on a salad in a new, delicious way, I came across a recipe that encrusted the goat cheese in walnuts and baked it. I loved the idea!!… but the recipe had way too many ingredients to be budget-friendly.

So, I set out again to create my own version that had big flavor but little cost!

F is for Feta-Stuffed Chicken with Sun-dried Tomatoes

Yet another recipe of mine made with ingredients I had on hand…

My husband said this is one of his favorite things I’ve made thus far!….

This salad can be made into a meal by adding some grilled chicken and fruit. You can grill your own chicken or buy the packaged chicken strips (heated or unheated) to use to make this a meal!

D is for Dorito Chicken

After making this for my family I experimented a bit more with the recipe to come up with the tastiest, crispiest product possible. Baking the chicken in the oven makes it much healthier than fried chicken. The challenge is that mixing chips with egg wash proves tricky when attempting to come up with a crispy final product! I believe I’ve come up with the Doritos recipe to give you great flavor and the crispiness you desire! The pictures taken reflect my first attempt at this recipe. My final written recipe will give you all the updates to make your Dorito Chicken the best (crispiest) it can be.
