Eat like a caveman!!
A dear friend of mine and her kiddos came over to hang out recently. They implemented the Paleo Diet with their family a while back and, when I knew they were staying for lunch, I thought I’d try my hand at some Paleo recipes!
The more I use puff pastry dough the more I like it.
Kind of a long title. But you know what you’re getting. Or at least you think you do. These were the recipe I was least excited for… and I liked them best. And they’re the easiest. Well, the fudge was pretty easy but powdered sugar destroys my kitchen. No matter how careful I am, it gets everywhere. EVERYWHERE.
Before we get started, I have a confession to make.
I have a conundrum. Perhaps you can be of help.

It’s hot. The ice cubes have stopped working. I decided to try ice cream instead. I’m liking the results.
I couldn’t just eat plain ice cream. I had to indulge my imagination a bit more than that.
I went a little overboard…. I came up with TWO Nectarine desserts to go with my ice cream! Both ideas struck at once and I couldn’t leave on of them behind. Thus, you will be getting TWO dessert recipes to end the Nectarine saga.
Hahaha. DOUBLE the desserts. DOUBLE the fun. No mint included… though, that might be tasty??
THE FIRST DESSERT… Vanilla Ice Cream with Nectarine-Blackberry Topping
I had been wanting to try stuffed peppers for quite some time and I finally had the chance to do it! This was the first time I made them and it won’t be the last. And… the stuffing included Feta… PERFECT!
I made some adjustments to a Greek Salad recipe I found and served it alongside the stuffed peppers… YUMMY!
Making this meal is a bit of a process, but if you do as much as you can ahead of time it’s MUCH easier and not so stressful! Still, leave yourself some time to get it all on the table… it’s not a quick fix but it’s a fantastic end result!
