On Cinco de Mayo I posted a Vanilla Bean Banana Muffin recipe that is to die for. But the thing is… banana muffins are not what you would call ‘festive’ for this holiday. Therefore, even though I didn’t have time to get step-by-step photos ready, I thought I should at least post one recipe this week in honor of Cinco de Mayo. {I will try to get a step-by-step for this recipe up soon though!}

Carbonara with a Twist
As I write this post my sink is full. There is flour spread haphazardly on my countertops. There are toys everywhere. There are at least two loads of laundry that need folding. Maybe three. But who’s counting? Weeds need pulling outside. Our carpets need vacuuming. The bathrooms need cleaning. And our realtor could text me at any moment to say someone wants to see our house in an hour.
But I’m ignoring all that because… well… I have been wanting to share this recipe and I cannot wait any longer!

These are EASY because I don’t have you make your own dough… I experimented with two store-bought doughs and was happy with both of them. They yielded slightly different results but BOTH were tasty!
