As I write this post my sink is full. There is flour spread haphazardly on my countertops. There are toys everywhere. There are at least two loads of laundry that need folding. Maybe three. But who’s counting? Weeds need pulling outside. Our carpets need vacuuming. The bathrooms need cleaning. And our realtor could text me at any moment to say someone wants to see our house in an hour.
But I’m ignoring all that because… well… I have been wanting to share this recipe and I cannot wait any longer!
This kind of dessert is really my favorite.

As I was concocting one last savory dinner dish for ricotta, I realized I had not done the most obvious meal possible for this ingredient: PASTA! How could I leave this one out? Being that Thanksgiving is upon us, I decided I must include a key Turkey-day ingredient to get my family’s hearts (and stomachs) prepared for what is soon to come. You could even make this as an “After Thanksgiving” meal and add some chopped up turkey leftovers to it. That would be amazing!
I’m doing it!
I’m telling you… I’m dead keen on quinoa.
It’s hot. The ice cubes have stopped working. I decided to try ice cream instead. I’m liking the results.
I couldn’t just eat plain ice cream. I had to indulge my imagination a bit more than that.
I went a little overboard…. I came up with TWO Nectarine desserts to go with my ice cream! Both ideas struck at once and I couldn’t leave on of them behind. Thus, you will be getting TWO dessert recipes to end the Nectarine saga.
Hahaha. DOUBLE the desserts. DOUBLE the fun. No mint included… though, that might be tasty??
THE FIRST DESSERT… Vanilla Ice Cream with Nectarine-Blackberry Topping
Okay, it’s confession time….
I knew I couldn’t get away with doing “Italian Sausage” and not finding or creating at least one ITALIAN recipe…
So here it is…
Italian Sausage & Tomato Rigatoni
After a fairly involved soft taco recipe, I knew it was time to switch to something simple…
Thus, this sumptuous pasta is much quicker to throw together!
I went WAY overboard on my Coffee recipes but it’s one of my favorite ingredients so I figured… why not?
I have two more recipes to post but they are WORTH IT! I may actually have 3 more recipes… but with Christmas just around the corner I’m making no promises (sigh).
Our “D” ingredient will come after Christmas and will be fast and furious and FUN! It will be all my own recipes so it should be interesting… stay tuned!
Okay, back to C is for Coffee…
This recipe is not one I would call quick or simple, but it makes you feel like a real chef and challenges your abilities in the kitchen. Or at least it challenged mine!
Here’s a small shot of the final result:
SO worth the time and work!
You can click here to see how to make the green beans I served along with the chicken. It’s another blue cheese recipe!
