Slow-Cooker Mexican Shredded Chicken

Slow-Cooker Mexican Shredded Chicken | Cinco de Mayo Recipes | ApplestoZiti.com

On Cinco de Mayo I posted a Vanilla Bean Banana Muffin recipe that isย to die for. But the thing is… banana muffins are not what you would call ‘festive’ for this holiday. Therefore, even though I didn’t have time to get step-by-step photos ready, I thought I should at least post oneย recipe this week in honor of Cinco de Mayo. {I will try to get a step-by-step for this recipe up soon though!}

Here is your Quinoa Burger recipe.

1. Quinoa burgers are MOUTH-WATERING.

Steak & Onion Sandwich

img_1610

After hitting “Publish” I realized that my most recent post, my Rustic Nectarine Pie, was my 100th POST!! What?!

This came as a surprise to both my husband and I…. “Honey!!!… do you have any idea how many posts I’ve made??” He was thinking between 35 to maybe 50 at the most… but ONE HUNDRED!? WHAT?????

Whew! That makes me tired… I won’t think about how many hours of pictures taking, color-correcting, and writing this adds up to be… A LOT. We’ll just leave it at that. Funny thing is… it doesn’t feel like that much really… I love every minute of it!

There’s no better way to start off another round of 100 posts than with this indulgent, fill-you-up good steak sandwich…

“O is for Onions” and this sandwich is packed with them! If you don’t like onions… you’re crazy. Let’s just get that straight. I still like you, I think…

But you’re crazy.

Chicken & Nectarines

Chicken and peaches is a classic “country” dish, and I thought… why not replace the peaches with nectarines?

I did and the result was delicious…

QUICK Baked Barbecue Chicken

This is so simple… you won’t believe it!

On this evening my husband had to work late so I knew it would be just me and my girls for dinner!

Hmmm… this meant none of the usual help he gives me while I’m making dinner…

I had to keep it simple and QUICK!

IMG_1135

The recipe may be simple but the possibilities for serving it are virtually endless….

You could serve the chicken with dipping sauces… then just add a veggie, a side salad and/or potatoes for a meal!

For a main dish salad you could serve the chicken on top of salad greens with crumbled blue cheese, onions, tomatoes, avocados, and a ranch or buttermilk dressing. You can pick and choose the toppings!

You could make a BBQ chicken quesadilla with similar toppings to the salad… crumbled blue cheese, onions, avocados or guacamole for dipping.

OR…

Put the chicken on a sandwich or wrap it in a tortilla… add toppings and ranch… another meal!

DINNER IS SERVED!

Really, you can enjoy it however you like… but it’s DELICIOUS any way you use it!

F is for Feta Guacamole

One of my favorite things to make is Guacamole.

Avocados are delicious in any form in my opinion… but they are especially delicious in guacamole. I have a sort of “standard” way I like to make guacamole and I thought… hey, why not add a little feta right into the guacamole?? I couldn’t imagine it being bad and it turned out wonderful! Just a fun way to mix things up a bit… especially if you want to put a greek twist on your guacamole! You could even serve it with pita chips instead of tortilla chips if you wanted to go Greek all the way!

Click here for my Feta Guacamole Recipeย (you can omit the feta if you like and get my “standard” recipe)! ๐Ÿ™‚ And, if you need a shopping list…ย Feta Guacamole Shopping List!

E is for Egg Burrito (Healthy Style)

Looking for something filling, delicious, and good for you? Look no further!

I discovered this recipe during my second pregnancy and have been making it ever since. If I’m making the recipe for just me (which is often the case), I will make a recipe for four and just add the eggs when ever I’m in the mood for eggs throughout the week. Making it for more than one person is simple too, AND, of course, it’s budget-friendly!

The hot sauce is optional but I like a little kick now and again with my eggs ๐Ÿ™‚

SHOPPING LIST:ย 1 red onion, 1 red bell pepper, 1 can black beans (low-sodium, if possible), 8 eggs, 1/3 cup pepper jack cheese (or cheddar if you don’t like it spicy), 1 large tomato (or two small ones), 1 small avocado, tortillas (recipe calls for 10-inch, burrito size)

Stapes to be sure you have: Canola oil, Chili flakes, Cooking Spray, Salt & Pepper

Some optional items:ย sour cream, salsa, hot sauce
