U is for Udon!
When we go to a Thai restaurant I pretty much know what I’m going to order before I walk in the door…
Today the chance for rain in Phoenix went from 30 percent to 20 percent…
My “Gigi” (my husband’s grandma) said it best: “It never rains at 20 percent”. Sadly, I know she’s right.
It was slightly overcast yesterday for an hour or two and I thought…. YES!! The rain is going to come! My hopes were shattered today when that percentage changed. I’ve started sucking on ice cubes to keep myself cool. I don’t mind the heat for the first few weeks but then it starts to make me tired and more easily irritated… by August I’m so ready for the heat to be over I can hardly stand it.
Besides ice cubes, the foods that sound best right now are those that are cool and refreshing… like chilled Pico di Gallo!
I thought it best to end on a classic… probably the first dessert most people think of when they consider lemon:

Come to think about it, I think I always am in this mood.

Well, life didn’t really give me lemons…
But I did go to make pancakes and discovered my box mix was all out except for a few sad tablespoons at the bottom of the box. (No, I am not against box mixes for making pancakes… if you have kids, you probably are not either… at least if you’re honest with yourself…)
Well, no box mix meant either no pancakes OR…
Making my own?!
Once I got the right consistency and flavor in my batter I cooked a few trial pancakes and I think I’ve found a go-to recipe for myself!
