Chicken and Peanut Sauce Noodles

After I finished cooking this recipe I looked around my kitchen (and my neglected house), saw the mess I had made, and just wanted to cry.

I always say things like, “It looks like a tornado went through here…” or “Is there a family a bears living here? Who made this mess?!…”

But this was different.

Easy Italian Sausage & Broccoli Calzones

Where did this past week go?!?

I’ve been busy working on a final Italian Sausage recipe while moving onto the “J” recipes!

Check out the CALZONE! Quick, easy, make ahead, cheap, and DELICIOUS!… Did I get everything in there…??

This recipe does it all. Except maybe the dishes… you’ll have to do those yourself… or enlist someone to help you.

Just tempt them with these calzones… they’ll have no choice but to grant you a night off from dish-duty!

These are EASY because I don’t have you make your own dough… I experimented with two store-bought doughs and was happy with both of them. They yielded slightly different results but BOTH were tasty!

E is for Egg Burrito (Healthy Style)

Looking for something filling, delicious, and good for you? Look no further!

I discovered this recipe during my second pregnancy and have been making it ever since. If I’m making the recipe for just me (which is often the case), I will make a recipe for four and just add the eggs when ever I’m in the mood for eggs throughout the week. Making it for more than one person is simple too, AND, of course, it’s budget-friendly!

The hot sauce is optional but I like a little kick now and again with my eggs πŸ™‚

SHOPPING LIST:Β 1 red onion, 1 red bell pepper, 1 can black beans (low-sodium, if possible), 8 eggs, 1/3 cup pepper jack cheese (or cheddar if you don’t like it spicy), 1 large tomato (or two small ones), 1 small avocado, tortillas (recipe calls for 10-inch, burrito size)

Stapes to be sure you have: Canola oil, Chili flakes, Cooking Spray, Salt & Pepper

Some optional items:Β sour cream, salsa, hot sauce
