Here is your Quinoa Burger recipe.
1. Quinoa burgers are MOUTH-WATERING.
2. My husband is CRAZY for QUINOA burgers.
3. The best way to cook a quinoa burger is in a non-stick pan on the stovetop.
After hitting “Publish” I realized that my most recent post, my Rustic Nectarine Pie, was my 100th POST!! What?!
This came as a surprise to both my husband and I…. “Honey!!!… do you have any idea how many posts I’ve made??” He was thinking between 35 to maybe 50 at the most… but ONE HUNDRED!? WHAT?????
Whew! That makes me tired… I won’t think about how many hours of pictures taking, color-correcting, and writing this adds up to be… A LOT. We’ll just leave it at that. Funny thing is… it doesn’t feel like that much really… I love every minute of it!
There’s no better way to start off another round of 100 posts than with this indulgent, fill-you-up good steak sandwich…
“O is for Onions” and this sandwich is packed with them! If you don’t like onions… you’re crazy. Let’s just get that straight. I still like you, I think…

Chicken and peaches is a classic “country” dish, and I thought… why not replace the peaches with nectarines?
I did and the result was delicious…
One of the home-cooked, comfort food meals that I often think of when I think of ‘ketchup’ is…
It may not be the fanciest, prettiest meal that you’ve ever eaten… but it’s satisfying and comforting. (sigh)
I had ground turkey on hand and instead of going out to buy ground beef to make meatloaf, I felt inspired to re-create this go-to comfort food in a way that was both hearty and healthy…. AND, of course, TASTY!!
Along with the ground turkey, I used oatmeal, chopped red bell pepper, and lentils to “beef” up this meatloaf!!
You will be enjoying a SUPER ‘good-for-you’ meal that is also comforting and full of flavor at the same time!!!
If you’re not excited, well… YOU SHOULD BE!!
This is so simple… you won’t believe it!
On this evening my husband had to work late so I knew it would be just me and my girls for dinner!
Hmmm… this meant none of the usual help he gives me while I’m making dinner…
I had to keep it simple and QUICK!
The recipe may be simple but the possibilities for serving it are virtually endless….
You could serve the chicken with dipping sauces… then just add a veggie, a side salad and/or potatoes for a meal!
For a main dish salad you could serve the chicken on top of salad greens with crumbled blue cheese, onions, tomatoes, avocados, and a ranch or buttermilk dressing. You can pick and choose the toppings!
You could make a BBQ chicken quesadilla with similar toppings to the salad… crumbled blue cheese, onions, avocados or guacamole for dipping.
Put the chicken on a sandwich or wrap it in a tortilla… add toppings and ranch… another meal!
DINNER IS SERVED!
Really, you can enjoy it however you like… but it’s DELICIOUS any way you use it!
We all need a good blue cheese dressing in our lives. I haven’t tried many recipes for making this yet, but this one was wonderful so I’m adding it to my favorites. Let me know if you have a version of blue cheese dressing that you love!
When I made this I made one mistake… I didn’t mash the blue cheese at the beginning. It was much harder to mash after I had added all the other ingredients. It was messy, to say the least. I wouldn’t recommend it.
You need 4 oz blue cheese (the recipe calls for Gorgonzola), 1/3 cup sour cream, 1/3 cup buttermilk, 1/4 cup mayo, 1 TBSP white wine vinegar, 1/4 tsp Worcestershire sauce, and 1/4 tsp black pepper.
Mash the cheese well with a fork FIRST. Add in all the other ingredients. Whisk to combine. DONE! It makes a little over a cup of dressing so if you don’t need it all store it in an airtight container for up to a week. YUM!
